Hello readers! It’s Sunday, and that means it’s time for a Sunday Post. I haven’t done any reading, but I have some other updates. So, let’s talk about what I’ve been up to and my plans for the next few months.
I am hoping in the next few weeks to get back to posting more. I’d like to go no more than two days in a row without a post.
I don’t know why, but I haven’t been able to read anything. I don’t feel like I’ve been mentally in a bad place. Usually that is the reason I am not reading. I just haven’t had the want to pick up a book for some reason. So, that is also a goal for May. I really want to get back to reading again.

Life Update:

I made my first bunny cake for Easter. I am so surprised how well this turned out because I’ve never done anything like this before. I used a cutout template from Homanathome to make the ears and bowtie.
I highly recommned using that template if you do this in the future! I know I would have made the most crooked ears if I freehanded this.
My mom wanted me to recreate the bunny cake my grandma used to make when I was a kid, which wasn’t easy. I actually never ate that cake even one time in my childhood, so I didn’t even know what flavor it was.
I actually hate coconut, so I was not about to make this cake with it. And that meant I had to get creative. I used cut up edible grass for the grass, and I shredded a white chocolate bunny to give the cake some texture on top. It doesn’t look as good as the coconut, but I think it still came out okay.
It’s also carrot cake instead of being white cake.
I mean, it is by no means perfect, but I am very happy with the results!
We went to my aunt’s house for Easter last Sunday so my daughter could do an egg hunt. There were prizes and she got a Hello Kitty Chia Pet. Did anyone have one of those in the 90’s/2000’s? I remember seeing them everywhere, but I never had one myself.
Today is also the end of my 3rd term at SNHU. I get a week off after today, which I am so excited about. I won’t be making honor roll this time, but I was close.
I had a statistic class that was so incredibly difficult this round. I mean, I still got a B in the class, but my grade wasn’t high enough for me to hit the honor roll.
Other than that, I have been in bed most of this past week. Chronic illness has been kicking my butt all week.
This next month, I am hoping to start this new term and then start a search for a job. Summer break is coming up for my daughter, which will make it harder for me, but I still want to do it.
I’m also going to try to start studying again for that Bookkeeping exam on Intuit in the next few weeks. It would be amazing if I could get that job while I go to school because I can do it from home and it’s really flexible.
I’m also planning another mini vacation this summer! This time we will be going to Chicago. I have been to Illinois before, but I haven’t been to Chicago or anywhere near it.

What I’ve Watched:
This week, I have been watching Oen High. This is a survival show in Japan which just recently formed a new Jpop group called Aoen.
I have this next week off, so I am really hoping to watch the new season of Black Mirror and The Last Of Us.

What I’m Listening To:
My absolute favorite Jpop group dropped a new album this month and I am loving their song Go in Blind. The show that I’ve been watching formed a group that is going to be at this same label.
This group is honestly so underrated and talented and I hope they really get the recognition they deserve down the line.
